Beef and Bean Burritos

This is a super easy and super simple recipe you can make in a cinch. What could make this even easier is using already browned hamburger or turkey meat that you keep in your freezer. I always try to have some ready to go in my freezer to make mealtime a little easier. Everyone liked this and ate it. My boys may have just eaten the inside of the burrito, but that counts as liking it in my book. I also didn't drizzle any sauce on top of theirs, since they like to eat with their hands most of the time, I'm hoping to teach them to eat with a fork by the time they are 16. Enjoy this easy weeknight meal!



Easy Beef and Bean Burritos
slightly adapted from The Pioneer Woman

Ingredients:
1 pound Ground Beef/Turkey
½  Medium Onion, chopped
1 can (7 Ounce) Mexican Tomato Sauce Or Enchilada Sauce
Salt And Pepper, to taste
Cumin, Oregano, Chili Powder, Garlic To Taste
1 can Refried Beans (You could make your own, but then it wouldn't be easy.)
1/2 cups Grated Cheddar Cheese
6-8 whole Burrito-sized Flour Tortillas
Extra Grated Cheese, For Sprinkling
Extra Sauce, For Drizzling
Cilantro Leaves, Optional
Optional Filling Ingredients: Mexican Rice, Sour Cream, Guacamole, Green Chilies, Pico De Gallo

Directions:
Preheat oven to 350 degrees.

Brown ground beef with onion and season to taste. Pour in sauce and simmer over low heat. Add water if mixture gets too dry.

Heat refried beans in a saucepan. Add cheese and stir in till melted. Keep warm.

Heat tortillas in microwave for one minute.

Spread a small amount of beans on each tortilla. Add meat. (If you want to add any additional ingredients, add them here.) Fold over ends, then roll up. Place burritos in a oven dish coated in nonstick spray.  Drizzle red sauce over the top and sprinkle with more grated cheddar. Place burritos in oven for 5-10 minutes until cheese is melted and burritos are very hot. Serve immediately.

I have never tasted or made burritos; these look and sound so good. Great combination of ingredients.
